What ist mate tea?

Mate tea is a tea made from the leaves of Ilex Paraguariensis (Yerba Mate), a bush that originally grows in southern regions of South America. Mate tea is mainly produced in the north of Argentina, Paraguay, Uruguay, and southern Brazil. For this method, the leaves and usually also the branches of the yerba mate bush are harvested and dried (smoked) in an oven over a fire to reduce the water level. Afterwards, the leaves can be additionally roasted. Crushing the dry leaves also produces a dust called “polvo”. Mate teas with polvo tend to taste more bitter. Some varieties, like our Muy Mate Organic Mate Tea, are not dried over a fire. In addition, the small branches are filtered. This process results in a mate “despalado” or “sin palo”, so in the end there are only pure mate leaves. This special processing results in a light green tea with much less dust than the usual varieties. This gives our mate tea a finer, “green” flavor.

What are the ingredients of mate tea?

Yerba Mate has a wide range of beneficial ingredients. The polyphenols in mate have a great bioactive effect. Mate contains more polyphenols than green tea and similar to wine. These include caffeic acid, caffeoyl acid, chlorogenic acid, theobromine and quinic acid. The polyphenols act as antioxidants and protect body cells from oxidative stress, aging, cancer and swelling. What are the side effects of mate tea?

Mate tea can be infused several times.  Traditionally, it is also poured until there is no flavor left – this is also called “mate lavado”. Typically, mate is infused up to 10 times before it loses flavor. A good rule of thumb to tell if a mate can still be infused is to watch the small bubbles as it is infused. If there are no more bubbles when infusing, then the mate is “lavado”.
